Here is my basic recipe for tomatillo salsa-
-1 pint tomatillos
-1 lime juiced
-almost a full bunch of cilantro chopped
- 2 Tbl. onion chopped
- 1 clove garlic minced
- Remove husks from the tomatillos and simmer in a pan of water until they are tender usually just a few minutes. Then chop the tomatillos and stir everything together. We topped our grilled vegetables and quinoa with this last night it was delicious!

Fennel-
This recipe is so quick and easy to put together. The result is a delicious slaw that has the mildest fennel flavor. Let it sit in the fridge for a couple of hours to let the flavors settle. Click here for the recipe- Fennel Slaw with Mint Vinaigrette

Pac Choy-
Sesame Noodles with Pac Choy & Hakurei Turnips
- Package of Soba or Udon noodles
- Baby Bok Choy washed and roughly chopped
- 4 stems of spring garlic chopped
- 4 Hakurei turnips sliced
- 1/4 c. sesame seeds
- 4T Tamari or Soy sauce
- 2t honey
- 2t rice vinegar
- 4t sesame oil
- 3T fresh herbs- I used cilantro & thai basil.
